All leaves used to brew the beverage properly known as tea come from the same plant -- Camellia sinensis. The processes that differentiate Oolong from Darjeeling, Sencha from Houjicha, Assam from Pu Erh, are as subtle and exacting as those involved in cutting a diamond or crafting a violin -- withering, rolling, sieving, fermenting, firing, grading and aging. From knowing exactly which leaves to harvest (and at what time of day), to knowing exactly when to stop fermentation, every step in the tea making process is the culmination of generations of experience, usually performed by hand. And the result is a drink of scintillating complexity, subtlety and a bit of mystery.
