Barista Training Levels

In the pursuit of excellence, Toby's Estate Espresso School provides training workshops to the passionate barista. Our espresso training is designed to benefit all levels of experience, whether you are non-industry, new to the industry or a professional barista.

Courses are available at Levels 1-5, including latté art. Students are awarded a certificate for each level and national accreditation upon completion of Levels 1-4. Classes are held on Monday, Wednesday or Thursday evenings from 6.30-9.30pm at the Toby's Estate Roastery and Espresso Bar at 129 Cathedral St, Woolloomooloo. All course prices are inclusive of GST.

Classes are limited to groups of 6-8 people to allow for hands-on practice and one-on-one attention. Group bookings are welcome.

The training is conducted by Cert IV qualified and experienced baristi, Toby Smith, Tom Hespe, Matt Timms and Chris Bonney. Toby is the founder of Toby's Estate Coffee. He has judged barista competitions internationally since 1998 and has been instrumental in establishing standards of quality and consistency in the coffee industry. Tom is an accredited barista trainer. Chris is also an accredited trainer with 15 years of management experience in some of the busiest cafes in Sydney. Chris is the manager of the Toby's Estate Espresso Bar, and is also training under Toby in the art of coffee roasting.

Level 1

 LEVEL ONE - Introduction to Espresso $150

This course covers an introduction to coffee from seed to roast, the workings of the espresso machine and grinder, machine cleaning and basic preventative maintenance, espresso extraction principles, milk texturising and the creation of the range of espresso drinks.

Level 5

 LEVEL TWO - Advanced Espresso $150

This Advanced Espresso Course follows directly from level one and can be done on the same day. This course focuses on refining grinding, tamping and dosing skills for excellent extractions, mastering milk texturing, flow procedures and efficiency.

Level 3

 LEVEL THREE - Preventative Maintenance $150

Level three will give you the knowledge and hands-on skills for maintaining the grinder and espresso machine. A barista must know what needs regular attention to achieve better extraction and prevent unexpected, costly and inconvenient repair work.

 LEVEL FOUR - Barista Competency Assessment $150

In this level students are assessed for competency in the preparation and service of espresso based beverages to meet the criteria outlined in the nationally recognised module "Prepare and Serve Espresso Coffee".

If you wish to gain national accreditation you need to have completed levels 1, 2 and 3.

Level 2

 LEVEL FIVE - Latté Art $150

Students must have completed levels one and two and show competency in milk texturising. The science and art of espresso includes the visual delivery of the finished product. In this workshop you will discover how to achieve free pour and multi tool techniques. This level is complimentary for students who book and pay for levels 1-4 in advance.
