Course: SCA Introduction To Coffee

Course Description: Introduction to Coffee provides students with an in-depth introduction into the world of specialty coffee and is the ideal starting point for the aspiring coffee professional. It provides the theoretical groundwork for further study and includes:

  • What is specialty coffee? Criteria and terminology
  • Coffee and specialty coffee history
  • Agriculture, processing and roasting
  • Flavour development and perception
  • Brewing basics

Course Description: Barista Foundation introduces students to the core skills and knowledge required to brew espresso based coffee beverages. Successful candidates must be able to calibrate their grinders and produce espresso and cappuccino to SCA core standards. Course includes:

  • History and development of espresso equipment and industry
  • Equipment operation and workplace management
  • Extraction and brewing principles and processes
  • Grinder calibration
  • Milk texturing, temperature and pouring
  • Beverage preparation
  • Equipment cleaning and maintenance

 

Course: SCA Brewing Foundation

Course Description: Brewing Foundation introduces students to the core skills required to create quality brewed coffee. Successful candidates must be able to identify the equipment, processes and terminology used to brew coffee to Gold Cup Standards. Course includes:

  • Coffee brewing history
  • Understanding filter, immersion and pressure brewing principles using equipment including Chemex, V60, Aeropress and quality flatt burr grinders
  • SCA quality guidelines and terminology
  • How and why do origin, process, roast and preparation impact flavour in the cup?

Course Description: Barista Intermediate builds on the skills and knowledge covered in Introduction to Coffee and Barista Foundation. The course is designed to teach and test the advanced skills required of specialty coffee barista. Successful candidates must be able to dial in a brew recipe, make a full range of espresso based drinks with quality and speed.  Demonstration of good customer service skills and equipment maintenance is required.

Course Description: Brewing Intermediate builds on the skills and knowledge covered in Introduction to Coffee and Brewing Foundation. This includes more in depth analysis of the factors impacting flavour in the cup along with the tools and knowledge required to both prepare and chart the brewing of quality coffee. Successful candidates must be able to analyse brewed coffee in relation to differences in roast profile, strength and extraction as well as brew coffee according Golden Cup parameters.

Course Description:
The successful completion of Barista Intermediate a minimum of three months prior is a prerequisite for this course. This course is designed to test the advanced skills and detailed knowledge of the science and processes used by a professional barista; that is someone with 12 months or more experience working as a barista with some managerial responsibilities. Successful candidates will have a detailed understanding of the ingredients, equipment and techniques at their disposal to maximise the quality, speed and efficiency of the drinks prepared up to world class level. Course includes:

  • Expert espresso extraction and analysis of flavour using a selection of coffees from different origins, varieties, processing method, roast profiles, ages and blends
  • Adjusting brewing parameters to affect flavour relative to these parameters
  • Understanding of interrelationship between extraction parameters and how changes in one may affect others
  • Grinder evaluation: blades, motors, particle size, heat, static waste and efficient and effective usage
  • Traditional and contemporary barista techniques and equipment
  • Scientific analysis of espresso using appropriate tools and techniques
  • The science of milk
  • Water testing
  • Professional level latte art
  • Café management including workflow, staffing, costing and customer service

Course Description:
The successful completion of Brewing Intermediate a minimum of three months prior is a prerequisite for this course. This course is intended to extend the practical and sensory brewing capabilities of the professional brewer. Students will be tested on their ability to navigate the coffee brewing control chart and prepare coffee to a professional level using a variety of brewing equipment and techniques. Course includes:

  • Understanding and controlling brewing variables: grind, dose, turbulence, time, temperature
  • Matching brewing styles to coffees
  • Understanding and manipulating the complex relationship between strength and extraction using the brew chart and measurement tools
  • Organic acids in coffee: sensory analysis
  • Grind analysis: micron size and distribution
  • Water: testing, analysis and brewing application
  • Bypass: brew, chart and application
  • Cold brewing
  • Holding temperature and times
