Ethiopia Djimmah Gr3 Espresso

A grade 3 dry processed (or natural) Djimmah is meticulously hand-sorted to retain the oomph of a traditional Djimmah (usually grade 4 or 5) but with greater balance and clarity. Our Grade 3 is a cracker with a nice, sweet grape and blueberry notes on top and a lovely, heavy cocoa flavour down below. It is heavy bodied and distinctive with a long, satisfying finish. This is a superb example of the coffee from this famous region of Ethiopia.

India Monsoon Malabar Espresso

Indian Monsoon is a very difficult coffee to get right. But our Monsoon, sourced from Aspinwall Estate, is really something special. Classic monsoon underneath, this coffee is huge and syrupy in the mouth with intense spiciness and earthy, woody notes. Unlike other monsoons, it also has a trace of acidity - just enough to provide a counterpoint to the action going on down below. A blockbuster coffee by any standard, the Monsoon is genuinely unique.

Java Jampit Espresso

Java was the origin I first fell in love with at Toby’s, and those pepper and spice flavours, with just a hint of floral, still kill me. Sophisticated but with a bit of roughness, Jampit is the Humphrey Bogart of coffees. Sourced by Paul from one of Java’s four government estates.

A classic Kenya with a little extra punch, Malimbe is rich and big-bodied, with aromas of orange peel and bourbon along with a long, cocoa finish. Big enough for milk but also complex and well-balanced for black, Malimbe is one of our favourites and we’re excited to be able to offer it again.

Cascadia Blend Decaf FT Org RA

This coffee is rich in flavour with notes of vanilla, almond and caramel. It has a nice brightness to it, unusual in decaf (the Swiss water decaf process tends to knock the top end off coffees). Certified organic and fairtrade, as well as certified bird friendly by the Smithsonian Institute! Decaffeinated without chemicals using the Swiss Water method.

Panama Kenya variety Gesha Light

This rare, low-yielding variety has been processed using the Kenyan method, in which pulped coffee is soaked underwater for several days. The beans are washed every 8 – 10 hours and the water is changed. This gentle fermentation reveals the exceptional, clean flavour of this gesha. Bright and busting with dark fruits, our Kenya Process Gesha has a beautiful base of cherry and raspberry. Intensely aromatic and wonderfully complex, the KPG has more sparkle than the Mama Cata, with a lovely, piquant cranberry acidity that offsets the insistent sweetness and imparts a clean, brisk finish. KPG is a coffee that engages and satisfies while still leaving you wanting more.

From a little slice of paradise in Volcan, Panama comes this multi-award-winning Gesha. Kopi Luwak

Roasted to order, our Kopi Luwak exhibits the juicy sweetness of fresh sugar snap peas, balanced by the sweet edginess of crystallised ginger. Impeccably structured, this coffee has a long, lingering finish that is both clean and defined. Its charm is in its lovely balance and completeness - a coffee that just needs to be experienced. Our Wahana Estate Luwak coffee is produced by free range Luwaks (Asian Palm Civets or “Toddycats”) living on Wahana's Sumatran jungle preserves, making it truly unique. The incomparable character of Kopi Luwak is a result of the processing performed by the Luwaks digestive system. The Luwak eats only the ripest and sweetest coffee cherries, acting as a coffee cherry sorter. The beans pass through the Luwaks digestive system where they are de-pulped. The combination of selective eating by the Luwak, and the subtle chemical changes brought about by the process produces an amazing coffee that is truly like no other in the world.
