Meet Little Baby Freezus

Specialty coffee has always been a fresh ONLY product. Farmers have to move their coffee within a few months or the opportunity for a good season quickly diminishes. Freezing coffee allows us to not only lock in the flavour but also to give the coffee a massively extended shelf life.Welcome to the new era of specialty coffee.

The pressure to smash through your most special coffees whilst they’re fresh is no longer a thing.

Just like a nice bottle of wine, serve it on those special occasions with the right company or when you want to spoil yourself. You now have the ability to drink coffee from all over the world whenever you like. Build a library in your freezer with your favourite coffees, keeping all that goodness frozen inside until the time is right.

 

How to look after Freezus

Your coffee has been optimally aged and vacuum sealed, so pop it in the freezer (it won’t come frozen) as soon as possible so that you can lock all those delicious flavours in.

How to prepare and brew Freezus

When the coffee is frozen you get a higher quality grind/shattering effect, so the sooner you grind your beans once out of the freezer the better. Do not thaw out! She ain’t last week’s meatballs. Check out how to brew Freezus with Simon in the video below. 

Costa Rica Vara Blanca

Complex yet elegant, our Costa Rica Vara Blanca is a honey processed Geisha featuring initial notes of rose, jasmine and lavender. Opening up to amazing sweetness and flavours of ripe strawberry, rockmelon and red papaya. Intoxicating undertones of musk and vanilla work in harmony with these fruity flavours to provide depth whilst a delicate mandarin acidity brings a touch of sparkle to the cup.

About the Producer

Mario Marin is a third generation producer who is pushing the boundaries of farming and processing by introducing new varieties and systems. He’s only 26 years old and has significantly improved the quality of the coffee produced in Vara Blanca. The Tarrazu region is located in the interior mountains of Costa Rica and is known to produce unique cup profiles that are rich, complex and structured. This small but amazing area boasts some of the best and highest quality coffees in the world.

Red Honey Process

Coffee cherries are hand picked, passed through a pulper removing the smallest percentage of mucilage with the least amount of water possible. The coffee is then transferred to raised beds where the beans will dry with their mucilage on the parchment.

Arguably the most demanding way to prepare coffee, honey processing aims to balance the sparkling florals of washed processing with the rich, jammy notes of natural processing. There are different intensities of honey processing from white, yellow, red to black.
