Welcome to our happy place, our passion project, our baby – the Flavour Savour series! We’re thrilled to introduce you to the world of specialty coffee through our carefully crafted blends. One of our main goals with Flavour Savour is to make specialty coffee accessible to everyone, even those who may not consider themselves aficionados. We understand that everyone has their own unique way of enjoying coffee, so we’ve created a blend that combines the excitement of single origin coffee with broad appeal when paired with milk.
Our aim is to help you discover and appreciate the diverse range of flavours that coffee has to offer. Whether you’re a seasoned coffee enthusiast or just starting to explore the world of specialty coffee, Flavour Savours is designed to make it easy for you to identify and enjoy different flavour profiles. We believe that by making the flavours more prominent, we can bridge the gap between dedicated coffee connoisseurs and casual drinkers.

How do we get the favours to be so prominent?
“Is it flavoured syrup?” Nope, but that’s a fair guess. We don’t blame you for wondering what the secret sauce is and how we were able to achieve all these crazy flavours! Let us introduce you to our friend, Rodrigo Sanchez.Rodrigo is a fourth-generation coffee producer based in Huila, Colombia. His family has been in the specialty coffee scene for 21 years and are dedicated to their own family project, Aromas Del Sur, with 420 hectares of land in coffee production. All his different farms have developed unique profiles that have achieved recognition at a world-wide level.

What is the fermentation process?

Let's dive into Rodrigo's coffee processing method. It all starts with his mother culture (click for an in-depth read on his mother culture) – an essential component in his coffee-making magic. Once Rodrigo's satisfied with its progress, he separates 80 litres and introduces the desired fruits, along with sugar or molasses to kickstart the fermentation process. This addition is crucial; it keeps the fermentation going strong. Without it, the process would stall.
Once both the mother culture and the fruit-infused mix are thriving, Rodrigo combines them once more. Then comes the exciting part – the addition of coffee cherries. The concoction is sealed in a tank and left to ferment for a whopping 190 hours!
It's a meticulous process, but one that yields incredible results. Rodrigo's attention to detail and innovative approach results in truly exceptional coffee.
We’ve also blended other origins for this series! Take, for instance, our very first Flavour Savour, Butterscotch Pudding, was a three beaner of Myanmar, Brazil and El Salvador with Myanmar bringing notes of strawberry, cherry and whisky, flavours that marry perfectly with the raisin and chocolate of the Brazil. The El Salvador provides sweetness and structure – all wrapped up in a nice bow during the release for the holiday season.
Fun Fact: We don’t dictate what flavours we want.
If you don’t dictate what flavours you want, then how did you come up with the flavours?! - Well, it’s all in the greens, baby.
We had quite the assortment of flavours to choose from, thanks to Rodrigo! At our cupping table, we initially considered up to 10 different flavours for purchase. From there, we narrowed down our selection even further after roasting, eventually landing on 5 distinct flavour components for experimentation.
Each roaster was tasked with creating their own compositions and ratios. For instance, when testing the Pandan Waffle blend, we experimented with various infused coffees, such as 40% vanilla, 40% marzipan, and 20% melons. Another combination might be 50% peach syrup, 30% tropical, and 20% melons. The goal was to develop these ratios to help us identify the one we truly loved, especially when paired with milk.
However, in the end, only one blend could reign supreme. Once we settled on our favourite, we presented it to the wider Toby’s team for their input. After they sampled the coffee and brainstormed different tasting notes, we faced the challenging task of selecting a fitting name—one that captured the essence of the blend and its flavours.
Here's another fun fact: Our roasters firmly believe in letting the coffee shine on its own terms. We roast our beans to accentuate their natural characteristics, allowing them to reach their full potential. We don’t try to impose a profile that doesn’t belong—it's all about letting the coffee be itself!

Are recipe cards important? – YES.

Our coffee team strongly recommends utilising our recipe cards as a reliable starting point for dialling in our coffees. They have meticulously crafted these recipes to ensure optimal extraction, so it's crucial to adhere to them for achieving the desired results. Additionally, it's important to note that our Flavour Savours are intended to be paired with milk. This pairing enhances the highlighted flavours, allowing them to shine through when enjoyed with milk. We invite you to place your trust in us and in our dedicated coffee team, who have invested significant time and effort into perfecting these recipes. Trust in the process; they practice this every day. Just as you would rely on a recipe while baking a cake, extracting coffee follows a similar principle!
Why do your shots run so fast?
The extraction time often raises eyebrows among many, as it's notably fast. Some even dub them "turbo shots". However, don't let the rapid pace deter you. In fact, it's intentional and crucial for ensuring an even extraction. Behind the scenes, we've meticulously tested this process to guarantee that it’ll taste phenomenal.
When adjusting your grinder, take incremental steps. If your shot feels overly intense, slightly coarsen the grind size. Conversely, if you crave more boldness, go a tad finer. The goal is to stay within the recommended yield time and make subtle tweaks. You'll be amazed at the results achievable through this approach. Expect a swift extraction and robust aroma—part and parcel of the journey toward the desired flavour profile.
