At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Distinctly Botanical from the First Sip
Colombia Finca Las Flores Floral Symphony comes out of a very particular corner of Huila, where the Vergara brothers - Jhoan, Carlos, and Diego - have evolved their family farm into a place where advanced processing is applied with discipline and purpose. At Finca Las Flores, traditional growing sits alongside methods like anaerobic fermentation and thermal shock.
Floral Symphony leans hard into its name, with a profile that reads distinctly botanical from the first sip. The coffee is natural processed, with an additional processing step layered in to build intensity, and the florals sit firmly inside the flavour rather than floating on top. Notes lean toward citrus rind, musk, and a confectionery sweetness, giving the cup a highly aromatic, juicy feel. That extra lift comes from the thermal shock process used at Finca Las Flores, where hot water is used to open the coffee before it’s rapidly cooled to lock those compounds in place. What you’ll get is a coffee with notable flavour density and concentration, a hallmark of this style of processing.
