and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
La Perla comes from a coffee producing region in Ecuador, known for varieties like Typica Mejorado and Sidra that have helped put the country firmly on the specialty coffee map. On his four-hectare farm home to 300 Typica Mejorado and Sidra Coffee trees, Fabian Lomas carefully ferments the coffee for 72 hours before drying it on African beds.
La Perla is smooth and delicate, with a silky and juicy mouthful that enhances as it cools. Floral notes appear first, before subtle botanicals show up with elegance and quality – a great showcase of what Ecuador has to offer.
