The Vision Behind Fitzroy

At Toby’s Estate, coffee has always been at the core of everything we do. Our Fitzroy flagship is no exception—it’s a space that heroes coffee in all its forms. General Manager Jody Leslie puts it best: "It’s not your typical espresso bar. It’s a venue that breaks down the divide between barista and customer, creating an immersive experience that puts coffee front and centre."

Located on Rose Street, the café is built around a central bar that invites guests to step closer, engage with our baristas, and be part of the process. The design—raw, edgy, and sophisticated—reflects Fitzroy’s creative spirit, with galvanised steel, mottled wood panelling, and deep plum-red tones creating a visually striking interior.

We’re also launching monthly tastings for anyone keen to deepen their coffee knowledge or explore new flavours. It’s our way of giving back to the coffee-loving community that inspires us.
