and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.

Corazón de Jesús comes from the Alvarado Fonseca family in Pérez Zeledón - a seven-person team who’ve spent years refining their approach through sustainability-focused farming and a lot of processing experimentation. Their work has already earned them wins in both the washed and natural categories at the 2025 Costa Rica Cup of Excellence. This lot uses a Double Anaerobic Natural process: a short sealed-barrel fermentation, drying on raised beds, a second longer fermentation, and then an extended patio-drying phase of around 45 days. It’s a process they’ve put real work into, and the results come through clearly!
