El Vergel EA Decaf is a standout decaf that doesn’t compromise on flavour. Grown by Elias and Shady Bayter at El Vergel Estate in Tolima, Colombia, this Red and Yellow Caturra lot undergoes natural anaerobic fermentation and slow, carefully controlled drying before the caffeine is gently removed using ethyl acetate. What’s left is a cup with all the character and none of the buzz — think blackberry, sarsaparilla, and rich, layered chocolate.

The Bayter family’s reputation precedes them. Since 2009, they’ve transformed El Vergel from an avocado farm into one of Colombia’s most innovative coffee estates, known for experimental fermentation and rare varietals. Their work has put them at the forefront of modern coffee processing — even pioneering Colombia’s first kOJI fermentation — and it’s why we were quick to secure this lot. It’s decaf that tastes anything but ordinary.
