At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Burundi Gakenke is one of those coffees that quietly wins you over the longer you sit with it. It comes from the Gakenke Washing Station in Kayanza, where thousands of farmers - most working with just a few hundred trees on tiny plots - bring their cherry each harvest. This coffee comes across juicy with a velvety mouthfeel, built around stone fruit notes and a bright, malic acidity that reads crisp rather than sharp. Early impressions lean clean and tea-like, with a Pink Lady apple character that makes it feel fresh and straightforward at first glance. What stands out is how much potential there is as it ages - sweetness and flavour clarity are expected to lift with age, shifting the coffee from simple into something more expressive.
