Sourced from Colombia’s Monteblanco farm, managed by Rodrigo Sánchez — a producer known for pushing boundaries in fermentation and flavour development — it’s processed using a Co-Fermented washed method. This involves cultivating specific microorganisms and fermenting the cherries with a starter culture made from peach jam, passion fruit, cholupa fruit, pineapple, mango, orange, and a sweetener like panela or molasses, resulting in a coffee that highlights both Colombian terroir and cutting-edge innovation.
