and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.

High in Boquete’s Alto Quiel region sits Finca La Estrella, a seven-hectare farm that’s been in the Saraceni family for more than a century. It started back in 1914 with Antonio Saraceni, an Italian immigrant with a background in winemaking. Four generations later, it’s still family-run and now led by Giovanna Saraceni - a continuation of a long line of women shaping the farm’s story.
This lot was processed by Franz from Lost Origin, who brings his background in craft brewing into the world of coffee. Using specific yeast and bacteria strains, Franz carefully controls temperature and fermentation to build complexity without overpowering the coffee’s natural character.
The coffee itself is elegant and understated – with high clarity of flavour and botanical complexity that keeps unfolding as you drink it. It’s a refined expression of Boquete and a strong start to our relationship with Lost Origin.
