At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.

Our Flavour Savour series is about actually tasting the notes on the pack. This time, we've teamed up with Tokyo Lamington. Starting with a coffee (always), a chat, and a few “what if we tried ...?” moments, the idea moved quickly from two complimentary worlds throwing ideas at the wall to a big idea - and flavour - that works. Lychee Lamington was no longer just a flavour note - it was coffee and it was also a cake. And they are both real-good.
