At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Costa Rica Monte Brisas comes from the Central Valley, a region that hasn’t featured in the lineup for some time. The coffee shows a lot of intensity in the cup, leaning fresh and fruit-forward, with bright malic acidity bringing a crisp, apple-like lift. Nutty tones sit alongside chocolate and sugar-browning sweetness, giving the profile structure without weighing it down. There’s a familiarity that echoes Monte Brisas’ natural lots, but with more clarity and less funk - bold, vibrant, and controlled. That intensity gives baristas plenty to work with - whether it’s stretched at longer ratios when fresh, or brewed after some rest to bring things into clearer focus with a higher dose. Produced at Monte Brisas, this lot comes from a hybrid variety (Sarchimor) crossing Villa Sarchi with Timor Hybrid, combining Arabica and Robusta in a way that feels structured and high-impact.
