At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Clean, Elegant and Crisp
Kenya Ndundu comes from the Ndundu factory, part of the Thiririka Farmers Cooperative Society, the largest cooperative in Kiambu County. Alongside its sister factories Kiganjo and Githembe, Thiririka has spent the past few years upgrading infrastructure across its washing stations - retiled channels and tanks, plus sturdier metal drying tables - aimed at improving consistency rather than reinventing the wheel. The cooperative works closely with farmers through on-the-ground agronomists, with early signs of an increase in farm productivity among participating farmers. This coffee is clean, elegant, and crisp, with acidity that feels integrated but still quite intense. There are clear citric notes, alongside berries and blackcurrant that show more as the coffee ages and clarity builds. It’s the kind of coffee that’s easy to drink every day, but still feels exciting – a cracker opener in a strong run of African coffees.
