and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.

High in the mountains near Concepción Huista, Antonia runs her farm Tzun Witz, which means “on the mountain” in Popti Mayan. A first-generation producer, she’s built her farm back from near ruin after the coffee leaf rust epidemic wiped out most of her crop. While her husband left to find work, Antonia stayed, managing the land with the help of her family and the El Sendero Cooperative. She now oversees every part of production herself, from hand-picking ripe cherries to sun-drying them on the patio.
