At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Warm, Honest, and Wonderfully Human
Ti Paung is a small village tucked just past Behind the Leaf Coffee - the kind of place you only reach if you mean to. When the team first arrived in 2016, the village had only a few coffee trees scattered between giant boulders. Their first real connection came a couple of years later while delivering ceramic water filters to the local school. One visit turned into an invitation from a group of grandmothers, who proudly shared their secret to long life: a cheeky bottle of moonshine. It set the tone - warm, honest, and wonderfully human.
Because each farmer harvests only a small amount, Ti Paung’s coffee arrives however it can - usually on the back of a motorbike or on trucks already heading out of the village for market day or family events. Since they bring the cherries in themselves, every farmer earns the full commission, and the team processes the small batches as dried naturals. It’s a straightforward setup that simply reflects how things operate in Ti Paung - practical, close-knit, and built around the rhythms of the village.
