110 Hours of Fermentation, All Flavour.

High up in Yirgacheffe, mornings at the Tulisi washing station start with farmers arriving from nearby villages, their baskets brimming with freshly picked cherries. Using traditional, organic methods, the cherries rest in sealed tanks for 110 hours before drying slowly on raised beds for about 23 days – all of which helps build a super clean and complex cup. Raspberry upfront, cooked pineapple through the middle, and finally that hit of salted caramel lingering sweetness.
