Looking for some healthy breakfast inspo? Just add to milk and yoghurt in the morning for a very adult breakfast but this coffee granola is good enough as a stand alone pick me up snack. So you probably also want to keep a jar of it hidden in your drawer at work.
Ingredients
- 2 1/2 cups almonds, chopped
- 1/4 cup freshly ground Toby’s Estate El Futuro blend
- 4 cups rolled oats
- 1/4 cup chopped medjool dates
- 1/2 cup butter
- 1/2 cup brown rice syrup
- 2 Tbsp sugar
- 3 Tbsp very strong brewed Toby’s Estate El Futuro blend
- 1 tsp vanilla extract
- 1 tsp sea salt
STEP 1
Heat oven to 160°C. Melt the butter in a small saucepan over medium heat. Remove from the heat and whisk in the brown rice syrup, sugar, coffee grounds, brewed coffee, vanilla and salt.
STEP 2
Combine almonds, dates and oats in a large bowl. Pour the coffee liquid over the top and toss to combine.
STEP 3
Lightly butter a sheet pan. Add the granola mixture and spread evenly over pan. Bake for approx 50 minutes to 1 hour, until golden brown and it feels dry to the touch. Cool completely on the tray before breaking into clusters.
STEP 4
Enjoy with milk or yoghurt and fruit of your choice. A perfect way to get your brekky and coffee hit in one go!
