Sticky BBQ ribs with Coffee Pepper Rub

Is there anything better than a fall off the bone, tender rack of ribs? This smokey coffee rub works great on ribs but also any kind of meat that you want to give the BBQ treatment. Smokiness from the spice mix combined with the complexity of the Broadway coffee blend makes this a winner for outdoor and indoor BBQ. Make a big batch and get grilling – this recipe is going to elevate your grill boss credentials!

Ingredients

  • 2kg Pork Ribs
  • Coffee Rub:
  • BBQ Sauce:
    • 1 onion finely chopped
    • 3 Tbsp olive oil
    • 1/4 cup red wine vinegar
    • 2 Tbsp tomato paste
    • 2 Tbsp Worcestershire sauce
    • 1 Tbsp Dijon mustard
    • 1/2 cup of water
    • 1/4 cup of tomato sauce
    • 2 garlic cloves, minced
    • 1/2 cup molasses
    • 1/2 tsp smoked paprika
    • Pinch of Salt
    • Splash of water

STEP 1

Prepare ribs by removing the under rib membrane. This step is important as the membrane will not soften during cooking and will also prevent the coffee rub flavouring the pork. 

STEP 2

Place coffee rub ingredients together in a bowl and mix well to combine.

STEP 3

Evenly rub spice and coffee mix into ribs and place in a non reactive bowl, allowing to marinade overnight, or at least three hours. 

STEP 4

Preheat oven to 100.C. Prepare a baking tray lined with baking paper. Place pork ribs on lined tray and add 1 cup of water to the tray. Cover tightly with foil and bake in a low oven for 2.5-3 hours.

STEP 5

Once pork ribs are soft remove from oven and allow to cool slightly uncovered. Increase oven temp to 225 degrees.

STEP 6

While the ribs cool, make your BBQ sauce. Sweat onions in olive with a pinch of salt. Deglaze pan with vinegar and then add in the rest of your ingredients. Simmer in a saucepan until thickened.

STEP 7

Paste ribs with BBQ sauce and return to oven for 10 minutes. Glaze again and return to oven for a further 10 minutes. Repeat once more if more caramelisation is required.

Enjoy with plenty of napkins on hand!
