At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Gesha Village sits in southwestern Ethiopia, where the estate was established in 2011 by Adam Overton and Rachel Samuel in a pristine forest environment selected for its altitude, rainfall, and soil. The farm is divided into multiple blocks based on microclimate and variety, with each lot carefully tracked from harvest through to export. Ongoing experimentation with processing and fermentation continues to shape the quality and character of each release. Uniquely, Cherries picked from each block are tagged to indicate their origin, and through a tracking system they developed in-house, they follow their journey all the way from the mill to export.
It’s clean and sweet, with a juicy mouthfeel and bright citrus running through it. There’s a balance between intensity and clarity here, with the florals and acidity you’d expect from Gesha Village, but all sitting together in a really composed way.
