Our coffee grid is designed to help you quickly find the perfect coffee for your taste
and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Gesha Village sits between 1,900 and 2,100 metres in western Ethiopia, where Adam Overton and his team have built a farm around the Geisha 1931 variety. If you’ve been with Toby’s for a while, you might recognise the name — this is the latest harvest from a coffee we’ve returned to for good reason.
Jasmine, nectarine and yuzu candy lead the way, with the kind of juicy intensity you’d expect from Geisha Village. The acidity and mouthfeel give the flavours plenty of lift, and as the cup moves from hot to cool, different expressions of the coffee start to show themselves.
