At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.

Nyamaso is one of those coffees that sparkles with clarity and brightness from the very first sip. Grown in Burundi’s Muyinga region and processed at the renowned Nyamaso Washing Station, this coffee reflects the care and precision of over 1,100 smallholder farmers working with Bugestal. Fully washed and meticulously sorted, the beans undergo a detailed fermentation and drying process that brings out their vibrant character and refined sweetness.
The flavour profile is crisp and elegant: think grapefruit, apricot, butterscotch. It’s lively without being sharp, sweet without being heavy – and absolutely delightful as a filter brew or a bright espresso. We chose Nyamaso for its clarity, traceability, and the story it tells in every cup. It’s the kind of coffee that shines whether you’re brewing for a cupping table or a quiet morning ritual.
