At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
A Coffee Built on a Lot of Small, Deliberate Decisions
India Riverdale Estate is built around a lot of small, deliberate decisions, rather than big gestures - and nowhere is that clearer than in how this coffee is fermented. Run by the Balaraman brothers, Riverdale focuses on harvest precision, selecting cherries from higher-altitude plots and measuring sugar levels so only the ripest fruit is processed. This lot, White Rose Natural, takes that care a step further: only the densest cherries are used, triple-washed with spring water, then fermented with rose petals before a long, slow dry on raised beds. That rose-petal fermentation isn’t a novelty add-on - it shapes how the coffee develops over time, with floral and tropical notes present from the outset and rose hips and rose-water-like aromatics becoming more defined as the coffee ages. Beneath the florals, there’s still a clear Indian character, with gentle spice, a familiar savoury undertone, and a softly creamy texture that keeps everything grounded.
