and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Tinamit is a young cooperative based in San Lucas Tolimán, near Lake Atitlán, formed in 2016 by growers looking to bring their coffees to market together. With 26 members farming between 1,500–2,000 metres, the group is focused on quality and sustainability, with a strong connection to the land around them and preserving the natural beauty of the lake. Cherries are hand-harvested and delivered the same day for processing, where each delivery is checked to ensure only fully ripe fruit is selected before drying.
In the cup, it’s fruit-forward in a way you don’t always see from Guatemala — juicy, with berry notes and a fuller body. As it cools, it holds its structure well, still carrying those classic Guatemalan traits, but with a bit more depth and richness. One for the Guatemalan coffee fans that wants to try a different expression of it.
