and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Alo Coffee is owned by Tamiru Tadesse, winner of the 2021 Ethiopian Cup of Excellence, who continues to push the boundaries of coffee processing from his farm in Sidama. In 2020, he took the unusual step of building a washing station above 2,400 metres, backing the potential of one of Ethiopia's highest coffee-growing regions.
Fresh off roast, it's juicy and silky with a jammy fruit profile that picks up with age. Cold fermentation gives this Ethiopian a different perspective, balancing complexity with a clean sweetness.
