and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Banko Gotiti sits in Ethiopia’s Gedeo Zone, within the broader Yirgacheffe growing area. Farming methods remain largely traditionally. Farmers typically grow coffee alongside food crops on small family farms, a common method to help provide food for their families. Cherry are also handpicked and delivered it to Banko Gotiti Washing station, where it is carefully sorted before being dried for around 21 days on raised beds.
In the cup, expect a juicy mouthful, with plenty of stone fruit and a clean, high clarity of flavour. It's elegant and complex, with sweetness and complexity coming through as it ages.
