and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
El Shalon sits in La Unión, near Neiva in Huila, where Milton Garzón Fierro has spent his life around coffee. Farming runs through his family, with parents, grandparents and relatives all producing coffee in the region, and Milton now carries that knowledge into his own 12-hectare farm.
Expect notes of cranberry, apple and cacao nib in the cup. It has a juicy, lingering sweetness with plenty of vibrant berry character without ever losing its structure. This is one that will age incredibly.
