At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Finca Los Angeles is a 16-hectare farm planted almost entirely with young Pacamara trees. Pickers are trained to select cherries at peak ripeness, guided by Brix measurements taken across the farm before harvest. After picking, cherries are carefully sorted ahead of processing.
In the cup, expect notes of dark chocolate and red wine, with a syrupy sweetness and a velvety texture. The fruit sits on the riper side, and those sugar-browning notes carry through the body and into the finish, giving it a full, rounded feel.
