At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
La Chorrera is the work of José Alfonso López Marín, who has spent the past decade building on his family's farming tradition in Huila. For this lot, ripe cherries are handpicked before 18 hours of whole-cherry oxidation, followed by 24 hours of anaerobic fermentation after depulping. The coffee is then washed using an EcoMill system, which reduces water use, before drying slowly for 15 days. The result is a washed coffee with plenty of clarity, backed by the extra sweetness and structure that comes from the extended fermentation.
