At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Tzun Witz means “on the mountain” in Popti Mayan, named for the fertile mountainside where Antonia farms near Concepcion Huista. A first-generation producer, Antonia began the farm with her husband, but when coffee leaf rust wiped out much of their crop, she stayed to rebuild while he left the region for work.
This is a classic washed Guatemalan with red fruit that shifts towards dried fruit as it cools. There’s plenty of caramel-like sweetness, but the real feature is the acidity — structured, lively and woven through the whole cup. Don’t shy away from it; that acidity is what gives Tzun Witz its shape.
