and brew method.
At Toby's, we've developed a tasting tool called "THE GRID". This measures the intensity
of the four key attributes found in espresso: acidity, flavour, finish, and mouthfeel.
Each coffee and blend is assigned an intensity level for each attribute and it must hit
this level before it can be released for sale. Our confidence in this program comes from
having a fixed recipe for each coffee, allowing us to understand and taste any changes
in environment, roast, or coffee quality.
Description
Grown in Tarrazú at 1,800–1,950 metres, this Milenio lot from Mario Marin is naturally processed. The coffee itself leans into red fruits — raspberry and berries up front — with starfruit brightness and a butterscotch sweetness underneath. With a bit of age, the clarity really comes through, bringing out more defined berry and stone fruit notes, alongside a subtle tropical edge. There’s also a nougat-like, nutty quality that rounds it out, making it one that shifts depending on how you approach it.
